Pizza Omelette

This low calorie (approx 225 per omelette) recipe gives pizza a new twist, and as it's cooked in a non-stick frying pan, the fat levels are kept as low as possible.

This meal also suits all tastes, being a good vegetarian option for a valuable source of protein (in the absence of meat).

Pizza Omelette

Ingredients

  • 2 medium eggs
  • 85g tomato
  • 25g mushrooms
  • 20g mozzarella
  • A pinch of mixed herbs

Method

  1. Break the eggs into the jug and beat with the fork.
  2. Pour the eggs into a hot frying pan and quickly swirl around the pan. Pull the mixture away from sides, using the spatula, and tip to let the uncooked eggs slip underneath.
  3. When the top is nearly set, add the chopped tomatoes, sliced mushrooms and mozzarella. Sprinkle over the mixed herbs. Add salt and pepper to taste, if desired.
  4. Place the pan under a hot grill and grill until the cheese bubbles. Serve with green salad and French bread.

Classic Toppings

Farmhouse - ham and mushroom. Hawaiian - ham and pineapple.

Vegetarian - green peppers, red onion, tomato, pineapple, mushroom and sweetcorn. Or something a bit more special

Meat feast - pepperoni, chicken, spicy beef, spicy pork and Cajun chicken.

Capricciosa - ham, roasted peppers, white anchovies, capers and olives.

Florentina – goat’s cheese, spinach and olives.

Treats for kids

Pizza face - make a face out of the toppings such as mushrooms for the eyes, pepper for the mouth.
