The De Cecco story began over a hundred years ago in Abruzzo where Nicola De Cecco produced "the best flour of the surrounding countryside" in his stone mill. "Zi Nicola" passed on his expertise to his son Filippo who began a new chapter of the De Cecco family history by starting the production of pasta. with the establishment of the De Cecco brothers' pasta factory, "the best flour of the surrounding countryside" had started its journey towards becoming the superior quality pasta we know today.
Combining old craft traditions and engineering intuition, Filippo De Cecco developed a new low temperature drying method which allowed pasta to dry in 24 hours irrespective of the weather limitations - until then sun drying was the only method which guaranteed quality. The new drying process allowed De Cecco to exploit market opportunities and periods of expansion post war continued to the present day, following the 1997 opening of the cutting edge Ortona factory.
Though the old mill may no longer be open, the passions and principles of the Founder still remain as the company uses fresh semolina from their own mill, bronze plate drawing, low temperature drying and constant quality control to ensure the pasta is as good today as it was over a hundred years ago.
